Curried leftover chicken lettuce wraps
Chef Deon shares his favourite way to use chicken leftovers during lockdown.
INGREDIENTS
250g shredded chicken (cooked)
100g cucumber
1 green apple (grated)
Half an avocado
20g coriander
8 romaine lettuce leaves
FOR THE SAUCE
3 Tbs mayonnaise
2 Tbs sweet chilli
1 tsp Raja medium curry powder
Chopped coriander stalks
METHOD
1) For the sauce, mix all ingredients together with the chopped coriander stalks.
2) Mix the sauce with the shredded chicken. Add the grated apple and mix together.
3) Slice the cucumber and avocado.
4) Open the lettuce leaves place the chicken mixture then the cucumber and avocado.
5) Finally, garnish with coriander leaves.
